Christmas Morning Muffins

Every Christmas morning my family stuffs our face… full… of MUFFINS. Typically I’m a donut or cookie girl, but this recipe had me loving muffins just as much. Now that my nephews are older and enjoy sleeping in a little themselves, our family starts Christmas a little later than we used to. That means for the first couple hours of Christmas morning, my parents, Nana, and I sit down with a monstrous mug of coffee and a muffin (or two… or three) and just relax. These muffins have always been a reminder to me of time with family, and now I’m excited they are helping me create new memories of slow Christmas mornings… I hope you enjoy them, and if you end up making them, let me know how it goes in the comments!

 

Christmas Morning Muffins

 

Serves: 10

Prep Time: 15 min.

Bake Time: 15-20 min.

Oven: 325°F

 

Ingredients:

 

1/3 c. butter

½ c. sugar

1 egg

1 ½ c. flour

½ t. salt

½ c. milk

1/4 t. ground cinnamon

 

Topping Ingredients:

 

½ c. butter, melted

½ c. sugar

1 t. ground cinnamon

 

Instructions:

 

1. Mix: In a large mixing bowl, cream together the butter, sugar and egg. Combine the dry ingredients and add to the sugar mixture alternately with milk.

2. Scoop: With a large spoon, fill your greased muffin tin cups 2/3 full. (I can usually get 10 muffin’s worth in a 12-muffin tin.)

3. Bake: Bake at 325°F for approx. 15-20 minutes or until light brown.

4. Roll: Let cool for about 5 minutes. While waiting, combine the sugar and cinnamon from your topping ingredients. Roll the warm muffins in your melted butter, then in the sugar mixture – coating the muffins completely from top to bottom, all sides!

5. Stuff Ya Face with Muffins: My family likes eating them cool, but if you’d like to get the warm fuzzies, slice these in half, add butter, and microwave for about 7-10 seconds. They’ll melt away in your mouth.
